3 Easy Lentil-Based Recipes (Healthy and Tasty)

Recipe: Lebanese Lentil and Rice Dish

Serving Size: 3 servings

Total Preparation Time: 60 minutes

Ingredients:

  • 2 cups of Brown Rice
  • 1 1/2 cup of Lentils
  • 1/2 medium sliced onion
  • 2 small garlic cloves

Seasoning:

  • Cumin
  • Sea Salt
  • Black Pepper (Optional)

Instructions:

  • Rinse Lentils and Brown rice.
  • Place Lentils in a pan with boiling water and allow to cook for 20-25 minutes. Place brown rice in another pan with water and allow to cook for 15-20 minutes.
  • Drain any additional water from the pan and combine lentils and rice in a larger pan. Add the onion, garlic, salt, cumin and black pepper and stir for 5 minutes at a low-heat.
  • Allow to cool for a few minutes and serve with a fresh garden salad.

Recipe: Vegan Spaghetti Bolognese

Serving Size: 3 servings

Total Preparation Time: 40 minutes

Ingredients:

  • 2 cups of Lentils
  • 2 cups of Tri-color Spaghetti (Spinach and Tomato Flavor)
  • 1 1/2 cups of Tomato Sauce
  • 1 Handful of Cherry Tomatoes
  • 1 Tablespoon Concentrated Tomato Paste
  • 1 Tablespoon of Olive Oil

Seasoning:

  • Sea Salt
  • Black Pepper (optional)

Instructions:

  • Cook lentils in boiling water for 25 minutes. Additionally, add the spaghetti into another pan for 10-15 minutes.
  • Drain spaghetti and lentils. In a large skillet combine spaghetti with the tomato sauce, lentils, cherry tomatoes, tomato paste, olive oil, sea salt, olive oil and black pepper.

Recipe: Lentil Tikka with Rice

Serving Size: 3 servings

Total Preparation Time: 45 minutes

Ingredients:

  • 2 cups of Lentils
  • 2 cup of White Rice (Brown Rice is a healthier alternative)
  • 3 cups of Tomato Sauce
  • 6 Zucchini
  • 6 Carrots
  • 3 Medium-Sized Tomatoes

Seasoning:

  • 1 1/2 tablespoon of Curry Powder (Tika Masala)
  • Sea Salt (optional)
  • Black Pepper (optional) and Paprika (optional)

Instructions:

  • Cook lentils in boiling water for 25 minutes. Additionally, add the rice into another pan for 20 minutes.
  • Drain lentils and rice of additional water. Add tomato sauce to a pan , add lentils, vegetables, Curry Powder, Sea Salt, and Black Pepper. For a hint of spiciness, add paprika!
